Potato Crochette

The other night I cooked something which I learned from David Rocco’s Dolche Vitta, a cooking show on Discovery Travel & Living. It’s called Potato Crochette and it’s simple to cook.
Ingredients (for 1-2 servings)
- Cornflour
- 3-4 potatoes
- Salt
- 1-2 slices of cheddar cheese (the original recipe used mozzarella)
- 1 egg
- Breadcrumbs
How to cook
- Peel and boil potatoes for 15-20 minutes with a teaspoon of salt.
- Drain and let the potatoes cool down
- Mash them and break the egg and mix them together
- Pour about 2-3 big dashes of cornflour into the mixture and mix it together
- Heat up wok with some cooking oil
- Shape handfuls of the mash potato mix into small sausages
- Make dents into them and stuff some a piece(s) of cheese into the middle and cover them up
- Coat the sausage shaped potatoes with breadcrumbs and toss them into the wok and fry them till golden brown. Be careful when turning them because they might be brittle in the beginning.
With this being my first attempt at this recipe there is room for improvement as I did not use enough cornflour to hold the potatoes together nicely. Here is the result

Yes I know it looks like pisang goreng. That’s why I mentioned to shape them smaller as they won’t end up as brittle as mine did.
